Homemade bread – there’s nothing like it!

Making Bread Without a Machine
Because sometimes, your hands are the best tools you’ve got.

I’m going to let you in on a little secret: you don’t need a bread machine to make amazing bread. Or a stand mixer. Or even a sourdough starter that requires a degree in fermentation science (I don’t even like sour dough – shocking isn’t it?t ).

All you really need?
Some flour. A bit of yeast. Warm water. A little sugar. Salt.
And maybe a good playlist while you knead. (It’s great therapy, too.)

It’s Simpler Than It Sounds

When I first started baking, the idea of baking bread from scratch felt… intimidating. Like there was some mystical Bread Club and I hadn’t been invited. But after one try – flour on my cheek, dough on my elbows – I was hooked.

There’s something heartwarmingly satisfying (and kind of magical) about turning a few pantry staples into a warm, crusty loaf with your own two hands.

No fancy gadgets. Just you and the dough.

So, How Do You Do It?

Here’s a basic rhythm to follow (and yes, you can totally print this and stick it to your fridge):

Simple No-Machine Bread

📝 Ingredients:

  • 3 cups all-purpose or bread flour
  • 1 packet (or 2 ¼ tsp) active dry yeast
  • 1 tbsp sugar or honey or maple syrup
  • 1 tsp salt
  • 1 cup warm water (not hot—just bathwater warm)

Steps:

  1. Activate the yeast – In a big bowl, stir your warm water, yeast, and your sweetener. Let it sit for 5-10 mins until it’s foamy like a bubble bath. This sugar is less about your taste and more about feeding the yeast, but choose a flavor that speaks to you.
  2. Mix it up – Add the flour and salt. Stir until it starts forming a sloppy dough.
  3. Knead it – Turn it out on a floured surface and knead for about 8-10 minutes. Yes, your arms will get a workout. Yes, you will feel like a rustic kitchen wizard. This is the time to think about all those irritating things you would like to punch and push. This is your therapy. And then you begin to smell the dough and you feel happy, pushing your happiness into the dough.
  4. Let it rise – Pop the dough in a clean bowl, cover it with a slightly damp towel, and let it rest in a warm spot for 1-2 hours until it doubles in size. If your dough seems rather sticky, you might want to spray the underside of your towel with oil, or place a butter wrapper -butter side down – on top of the dough, then the towel.
  5. Shape and rise again – Gently shape it into a loaf or a ball, set it on a baking sheet or in a loaf pan, recover, and let it puff up again for about 30-45 minutes. If your oven is warm enough (at least room temperature, let it rise in the oven, but take your towel off before baking!!
  6. Bake it – Bake at 375°F (190°C) for about 30 minutes. The top should be golden brown, and it should sound hollow when you tap it.
  7. Cool (a little) and devour – Try to wait at least 15 minutes before slicing into it. (Or don’t. I won’t judge.)

Why Go Machine-Free?

Because there’s something satisfying about doing it yourself.
Because sometimes machines break, or the power goes out.
Because it slows you down in the very best way.

But you know what, there is a time and a place for th e machines too. Do you have arthritis or some other reason to not hand knead it? That’s ok. Go ahead and use a stand mixer with a bread hook. Honestly, it will taste just as good.

Or, you’re busy working out in the garden or lambing has you up at all hours? Go ahead and use the machine. Machines are here to make our lives easier. Use it and enjoy those amazing smells and homemade taste.

Because nothing, absolutely nothing, beats the smell of fresh bread wafting through your kitchen.

Making bread by hand has become one of my favorite simple pleasures. It’s part therapy, part tradition, and a whole lot of yum.
